You don't have to turn on the heat. The coolant flows through the core regardless of the heat being on or off.
 
correct. Just be careful. You'll get a lot of coolant out of that top rad hose real quick. You don't have to run the engine to flush the cooling system if your using a hose since it has plenty of pressure to push it's way through the cooling system already.
