On the temp control : having one adjustable feeding a relay is the way to go.
You can play with temp settings it and dial it in to your specific needs. If easy to change between a couple settings, you could have an economy mode and a heavy use load.
Also with relay, the a/c can control it to come on and give you colder air. Then the ability to have a switch in the dash for the big hill that you would rather get a jump start on cooling before the heat starts adding up. Then if you are nutso like me and like to drive through deep water, you can have a fan shut off switch so you dont break or bend fan blades and possibly have blades eat radiator and belt. - seen that several times offroading.
