What's the wheelbase on the Tahoe? I wonder if the limit is 5000 lbs based on the wheelbase. Towing long trailers with short wheelbase tow vehicles is not fun.
I can understand wanting to keep the higher gears. For how I use the Tahoe, I have always wished I had them to drop the RPMs just a bit more

Wheelbase is 111.5" which is slightly longer than a regular cab short bed and slightly shorter than a regular cab standard bed.

Where's your tranny cooler on this? Is it a coil inside the radiator or a separate cooler outside? I'm betting you have at least the one in the rad.
Here's where I'm going with this. You have 3.42s, so when you're pulling up a hill your off of the TCC and in 3rd or 2nd. This makes lots of tranny heat and you're shoving this into the radiator and causing the overheating problem.
Just my .02, but, when I "divorced" my transmision circuit from my radiator I got a lot of heat out of my engine.

Not slow at all. The engine pulls it just fine. Just gotta get the temps down.
When towing in town and in stop and go traffic where there is no air flow across the fins of the external cooler, there is very little cooling that can take place unless there's contact with the cooler water in the radiator on the heat sink inside it.
I have a larger than normal external cooler, as well, and I wouldn't by-pass the cooler inside the radiator, myself. That's just me, though.
