Is it possible to run 265/75-16 on a stock height 97 C2500?
There is a difference in ride height between the C/K2500 because of GVWR the 8.6k+ would be the highest allowing more clearance for larger diameter & wide tires w/o need to raise suspension.

Largest diameter I've seen on unmodified GMT400's are 255/85/16 on stock wheels that's 33.5" (unloaded) average between brands and generally 31.5 loaded as measured from flat road surface to center on hub.

Another 33.5" tire unloaded is 295/75/15 however even in AT range it will cost a few MPG's up top on highway, this is what I run.

Wider tires require trimming the trailing edge of the fender opening and in some cases the trailing edge of the front bumper.
