I have a 77 GM 5 ton truck with a 427. It's a hot mother. To help with heat everyone removes the rubber flaps in the wheel wells. Maybe that would help with heat and air flow on the 6.5 as well.

see post 19, great minds think alike.
When I had trouble with over heating, with the 6.5 , I welded the fan solid with two pieces of steel and put in a high flow 180 degree thermostat for a big block chrysler,The temperature never went over 180 no mater how I drove it, I didn't like the fan noise though, I now have a flex fan ,it is quieter but don't cool as good, if you have the thread on fan you could use one off of a vortec 350 chevy van, some of these have 9 blades. I don't think an clutch fan will out do a solid one as it will probably still slip a little at higher rpms.

Bobbi Martin is selling the hyd fan set up off his GEP Hummer engine IIRC
I don't think the AC clutch would be heavy duty enough. The hyd you could just make manual turn it on when you want and have a machinist put on a serp pulley.
