6.5 turbo diesel

Hate to say this, but you are showing the classic signs of head gasket failure/cracked head(s). Also, ONLY use GM/ACDelco thermostats in these engines, period. Doesn't matter if they're a brand name like Stant or MotorRad, only use genuine OEM stats.
