Where to plumb in new coolant temp sensor/gauge

I'm planning on adding a separate engine coolant temp gauge, where would be the best place on the engine to mount the new sensor? Is there a port available somewhere or would I use the existing sensor (located where exactly?) and just bypass the factory gauge in the dash? Are all aftermarket gauges created equal?
